Make a good spring dinner with chicken, lamb or vegetarian. At the party you can invite for a spring dinner with lovely primers such as asparagus and dilute pea shoots. Provides wonderful spring feel to the food.

Open vegetarian lasagna with grilled asparagus and hollandaise. A quick-cooked, vegetarian open lasagna that does not require any oven.

Sauce: Beat the crème fraichen firmly with electric whisk. Mix egg yolks, wine and sugar in a saucepan. Heat with strong whisk to a fluffy sauce. Remove the pan aside and whisk in the crème fraichen. Season with salt and cayenne pepper.
Break off the bottom of the asparagus. Boil water in a wide saucepan and put in the asparagus. Let boil for 1 minute. Flush the asparagus with cold water and allow to drain.
Brush the asparagus with oil and salt. Grill the asparagus around on the outdoor grill or in the grill pan about 3 min.
Divide the lasagna plates in two. Put them in slightly salted boiling water and cook for about 2 minutes. Let them drain.
Place a lasagna plate each on 4 plates. Spread asparagus and sauce on top and place the remaining lasagna plates over. Garnish with lemon slices and herbs and grind over pepper. Serve immediately.
